Red onion – red onion is nice to eat raw; don’t use white onions as a replacement since the taste will be too strong.
Capers — capers give zing to the dish.
Use black or kalamata olives for the olives.
Herbs Like basil or rocket (arugula) provide flavor to the salad with their pepperiness.
White wine vinegar has a softer taste than regular vinegar.
How To Make A Salad With Italian Potatoes
Prepare the potatoes. Boil the potato cubes in salted water until they are barely tender, but still have a bite to them. Make the rest of the Ingredients. Thinly slice the red onion and marinate for at least 15 minutes in the vinegar.
After the potatoes have been boiled and the onion has been pickled, combine the cherries, capers, olives, and basil in a mixing bowl. Drizzle with extra virgin olive oil.
Variations on Italian Potato Salad
You may add meat to the recipe if you don’t want it to be vegetarian. Chopped bacon, smoked chicken, or smoked salmon are all good options. If you’re using bacon, sauté it first.
